Types of Saturated Fat

Saturated fats are derived from animal products, such as meat, dairy and eggs, and also from plant based products such as coconut and palm oils.

The source of the saturated fat depicts the way in which the fat is made up, its chemical properties and thus how it affects our health. 

Long-Chain v Medium-Chain Fatty Acids

The chemical structure of fats are grouped into long-chain fatty acids, medium-chain fatty acids or short-chain fatty acids. If you google these terms you can see the differences and how the body breaks them down.

Coconut oil is a medium-chain fatty acid.

Lauric Acid

Coconut oil contains the richest natural source of lauric acid, approximately 48%, compared to butter or milk fat, which equate to only 3%. 

These are the only other food sources that contain any significant amounts of lauric acid.

Lauric acid is found in abundance in a mother's breast milk.
